The best practice in golden autumn in South Tyrol
During Törggelen time in the Eisack valley- as the good tradition wants- you hike in September and October by our wine villages. It goes by the farms of busily engaged wine growers. Everywhere lure taverns where you can taste the new wine and the grape juice (Sußer). In this occasion also savory specialties are awarded, for which our cuisine of the Eisack valley is so famous. Originally, this tradition has developed from the custom of our winemakers in autumn in South Tyrol of celebrating the completed vintage in cheerful round. This concerned mainly the farmers, their families, their neighbors and their reading helpers. The really private ceremony took place first in their own wine cellar – let say, right next to the bulging barrels. Sometime proper court festivities were organized in the open air and in taverns. And because it attracted more and more visitors, the Törggelen turned in Eisack valley into a custom for all those who appreciate a good wine and a delicious meal. In our wonderful wine region some good vines grow, whose sparkling juice also can be enjoyed on our table like in a traditional tavern.
As the name of our Törggelen in the Eisacktal originated
And where does the term “Törggelen” come from? In Eisack valley the grapes are pressed with a “Torggl”. This is a device, mostly made of oak, whose name derives from the Latin “torculum” (rotary press). The wine pressing itself can be also generated by leverage and is a strenuous task for several strong men who have to do in up to eight hours. So you can imagine that they cannot miss a rich strengthening and a refreshing drink after Törggelen.
Your tavern with homemade Törggelen-specialties
To a lively Törggelen table round, next wine and grape juice, belong also South Tyrolean bread, bacon and smoked sausages, roasted chestnuts and nuts, and many other hot and cold South Tyrolean specialties. In our tavern we spoil you for example with homemade bacon dumplings, ravioli or homemade sausage with sauerkraut which we prepare with love following old recipes, which are typical for the Törggelen in Brixen. Many of our guests come specifically because of the delicious temptations that can be found like this only with us at the Trametsch hut and whose ingredients often come from the farm.
